The Bouju family has been producing cognacs in the heart of Grande Champagne 1er Cru for over 200 years. They manage 30 hectares of vineyards, which began to be transplanted in the middle of the 19th century and grow only the Ugni Blanc variety. In the oldest cognacs, however, we can still find the previously commonly used varieties Colombard and Folle-Blanche. After the fermentation of the grape juice, the resulting wine remains on the yeast until distillation and is not filtered for distillation either. It adds eau-de-vie cognac roundness and aroma. Then the cognac matures on oak barrels (only part on new barrels) in earthenware cellars. Daniel Bouju has been hiding part of the crop for vintage cognacy since 1990.
